玉村豊男(たまむら とよお、1945–2026)は、東京都出身のエッセイスト、画家、農園・ワイナリー経営者。東京大学文学部仏文科を卒業し、パリ大学への留学、通訳・翻訳の仕事を経て文筆活動に入った。『パリ 旅の雑学ノート』をはじめ、旅、都市、料理、食文化、田舎暮らしについて、自らの経験をもとに執筆。1991年に長野県東御市へ移住して農園を開き、2003年にはヴィラデスト ガーデンファーム アンド ワイナリーを設立し、地域に根差したブドウ栽培とワイン造りに取り組んだ。代表作『料理の四面体』は、世界各地の料理を個別のレシピとしてではなく、火、空気、水、油という四つの要素の組み合わせとして捉え、焼く、煮る、揚げるなどの調理法に共通する原理を図形によって説明した。
Toyoo Tamamura (1945–2026) was a Japanese essayist, painter, farmer, and winery founder from Tokyo. After graduating from the University of Tokyo with a degree in French literature, he studied in Paris and worked as an interpreter and translator before beginning his writing career. Starting with “Pari Tabi no Zatsugaku Noto,” he wrote extensively about travel, cities, cooking, food culture, rural life, and personal ways of living. In 1991, he moved to Tomi in Nagano Prefecture and established a farm, followed in 2003 by Villa d’Est Gardenfarm and Winery, where he pursued grape cultivation and winemaking rooted in the local landscape. His representative work, “Ryori no Shimentai,” treats the world’s cuisines not as separate collections of recipes but as combinations of four elements—fire, air, water, and oil—and uses a geometric model to explain the principles shared by such techniques as roasting, simmering, and frying.
