Kentaro Murakami is a nutritional epidemiologist who studies relationships between dietary habits and health using population data. Born in Hokkaido, he encountered nutrition while studying at Ulster University during his undergraduate education at Hokkaido University. He subsequently studied food and nutritional sciences at the University of Shizuoka, completing a master’s degree in 2005 and earning a doctorate in 2009. His research career included the National Institute of Health and Nutrition, the International Medical Center of Japan, and the University of Tokyo. He returned to Ulster University as a Japan Society for the Promotion of Science overseas research fellow, later worked at the University of Shiga Prefecture, and rejoined the University of Tokyo, becoming professor of social and preventive epidemiology in August 2023. His fields include public health nutrition, nutritional epidemiology, and behavioural nutrition. He investigates dietary self-reporting and meal-specific intake assessment and developed the Meal-based Diet History Questionnaire, or MDHQ. In “Kiso kara Manabu Eiyogaku Kenkyu” (2022), published in English as “Nutrition Research For Beginners,” he explained the research process through examples, from ethics and critical reading to conducting studies, presenting results, and evidence-based practice. Co-authored with Nana Shinozaki, “Tabemono Juryou Hayawakari” used food and portion images derived from dietary records to help quantify intake. “Kyoyo to Shite no Eiyogaku: Shokushukan to Kenko no Joshiki o Utagau” (2026) distinguished anecdote from evidence and correlation from causation. It examined Mediterranean and Japanese diets and ultra-processed foods, discussing the limitations of dietary measurement and the wider food environment.
