Iliana Regan is an American chef. Largely self-taught, she developed a distinctive style of cooking based on foraged plants, mushrooms, and ingredients from the Midwestern landscape, earning a Michelin star for her Chicago restaurant Elizabeth. She transferred ownership of the restaurant to its employees in 2020 and went on to operate and cook at Milkweed Inn in Michigan’s Upper Peninsula. In "Burn the Place: A Memoir," Regan traces her journey from gathering food on her family’s Indiana farm to opening her own restaurant in a male-dominated industry. Alongside her development as a chef, she writes candidly about family conflict, sexual identity, alcoholism, and recovery. The book was longlisted for the 2019 National Book Award for Nonfiction.
